Steamed Carrots with Lemon-Dill Butter

steamed carrots recipeI don’t remember where I found this steamed carrots recipe, but I’ve been using it for years and we love it! It’s so easy to make, and really kicks plain old carrots up a notch! And the best part is that the kids gobble them up!

Steamed Carrots with Lemon-Dill Butter

3 cups baby carrots, trimmed (or peeled, sliced carrots)

2 Tbsp unsalted butter, softened

2-3 tsp. lemon juice (if you don’t have any, it’s still good w/out)

2 Tbsp. fresh dill, or 1 Β½ tsp dried

ΒΌ tsp salt

1/8 tsp pepper

Cook carrots in steamer basket over simmering water in covered saucepan for 8-10 min or until tender. Transfer carrots to a bowl. Toss with butter, lemon juice, dill, salt and pepper. Serve immediately.

Couldn’t be easier!

  1. Deanna, You can use the recipe with any carrots. Grow your own and slice them up if you’re not sure about the quality of ones you buy. πŸ™‚
    Homegrown ones taste the best, anyway!

  2. These sound yummy! I will have to try it with the lemon. I make a steamed carrot recipe very similar to this but they are maple dill carrots -you basically just replace the lemon with an equal amount of brown sugar, it gives the carrots a lightly glazed sweet maple flavor. I put all the ingrediants other than the carrots and cook it in a skillet for a minute then add the carrots and let them glaze up a bit.

  3. Ever heard anything wierd about baby carrots. I quit using them because of all the info. I read about how they are processed and kept from going bad. Recipe looks yummy though.
