Canned Potatoes Recipe

Ingredients

  • 2-3 lbs white/irish potatoes per quart
  • canning salt optional
  • water

Instructions

  • Peel and wash potatoes.
  • Drain.
  • Cube potatoes.
  • Cover potatoes with water in a large pot; boil 10 min.
  • Drain.
  • Pack hot potatoes into hot jars, leaving 1″ headspace.
  • Add 1/2 tsp salt per pint, 1 tsp per quart, as desired.
  • Ladle boiling water into jars, leaving 1″ headspace.
  • Remove air bubbles.
  • Adjust previously simmered lid and ring.
  • Process pints 35 min., quarts 40 min. at 10 lbs pressure in a pressure canner.
