It was one of those mornings.
The kids were rolling out of bed one at a time, sleepy eyed and hungry.
We were out of cereal. Out of frozen waffles. And they didn’t want oatmeal.
I needed something fast and satisfying.
I opened the pantry and spotted a box of Thrive Life Raspberry Muffin Mix. I just received it in our Thrive order this month, so I was anxious to give the muffins a try.
A quick glance at the necessary ingredients assured me I had everything I needed on hand: 2 eggs, 1/3 c. oil, and water. Perfect.
It took about 3 minutes to whip up the batch and get the muffin tin filled. A 400*oven and 15 minutes later we had delicious golden muffins on our plates and hot green tea in our cups.
No worries about unsavory ingredients that might be lurking inside.
You would think that freeze dried raspberries might be weird in muffins. Crunchy maybe?
Not at all. They moisten in the batter and bake up soft and flavorful, just like fresh berries.
I’ll definitely be adding more of these muffin mixes to my monthly order. They’re perfect for a super fast baked treat, but I’d also like to keep a stash of them in our emergency food pantry.
