What do you do when you are blessed with 20 very ripe avocados on the verge of extinction? Why you freeze them, of course! But you can’t just chop them up and toss ’em in a freezer bag. Nope. Not unless you like the look of gray guacamole. You gotta know the trick.
Here’s how to store avocado in the freezer. It’s easy, really. These avocados are destined to make a fabulous dip in the future. Simply scoop it from it’s shell, remove the seed, and mash the avocado in a bowl. For every two avocados add 1 Tbsp lemon juice. Stir it in very well. Spoon the green mush into a freezer bag, and remove as much air as possible. Make sure to date the bag, it will only be good for about four months. Then pop it in the freezer to save for the perfect occasion.
This would make a great base for guacamole. It’d also make fantastic baby food, or a great dip for the kiddos to dunk their veggie snacks in.
Unfortunately, freezing avocados is the only way to preserve them (that I know of). I’m happy to be able to keep them somehow though! We LOVE avocados.
