Old Fashioned From Scratch Pancakes. Delish.

If you ask our children what they want for breakfast, chances are pretty good they’ll scream in unison: PANCAKES!! I’m pretty sure they’d eat them seven days a week if I let them. I try to offer a variety of breakfast meals throughout the week, so we don’t have pancakes that often.

Here’s one of my favorite from scratch pancakes recipes. It’s quick, easy, and uses simple ingredients. Every one comes out perfectly every time. They’re fluffy and thick, and keep a nice round shape while cooking.

If you’re one who has trouble cooking pancakes, the trick is to make sure the skillet is hot enough before you pour the batter in. Turn the stove up to medium and let a 12″ skillet heat up for a few minutes. Sprinkle a few drops of water into the skillet- if they dance and disappear quickly you know it’s ready. Pancakes brown nicely in a hot cast iron skillet.

For my family of six I usually double the following recipe.

Try making baked pancakes the next time you need an easy breakfast. Double the following recipe and pour the batter into a greased 10×13 baking dish. Bake it at 350* for about 30 minutes, or until a toothpick comes out clean. Feel free to add blueberries to the batter before baking. Sometimes it’s easier to bake pancakes vs. flipping them one by one.

Top with your favorite syrup and enjoy!

Old Fashioned From Scratch Pancakes

 

Ingredients:

  • 1 egg
  • 3/4 cup milk
  • 2 tablespoons butter, melted
  • 1 cup flour
  • 1 tablespoon sugar
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt

 

Directions:

  1. Beat egg until fluffy.
  2. Add milk and melted butter.
  3. Add dry ingredients and mix well.
  4. Heat a cast iron skillet over med. heat and grease with a little butter or coconut oil.
  5. The skillet is hot enough when a drop of water dances and disappears quickly.
  6. Pour a small amount of batter (approx 1/4 cup) into the skillet.
  7. When bubbles appear on surface and begin to break, turn over and cook the other side.
  8. Grease the pan as needed between pancakes to reduce sticking.

 

For a real treat, try making Whole Wheat Chocolate Chip Pancakes. Honestly, these are a very rare treat around our home. But boy do the kids go nuts for them.
