Easy Breaded Parmesan Chicken

If you know me by now, you know I’m all about doing things easy and cheap, without losing quality. Here is a yummy recipe for a quick chicken dinner that is easy to make and doesn’t involve a bunch of expensive ingredients! Enjoy.

Breaded Parmesan Chicken

  • 4 boneless skinless chicken breasts (cut in half)
  • 1/2 c. seasoned breadcrumbs
  • 1/4 c. grated Parmesan cheese
  • 1/2 tsp dried oregano
  • 1/4 tsp garlic powder
  • 1 egg
  • 1 tbsp butter
  • 1 tbsp olive oil (or vegetable oil)

Flatten chicken to about 1/4 in. thick ( I like to use a measuring cup to beat it down). In a shallow container combine breadcrumbs, Parmesan, garlic, and oregano. In another shallow bowl beat an egg. Dip the chicken into the egg to coat, then into the seasoning mixture, making sure to coat both sides well. In a large skillet, brown the chicken in butter and oil over medium heat for about 3-5 min. on each side, or until cooked through.

I like serving this with Lemon-Dill Buttered Carrots.

  2. I cooked this recipe tonight and my 2 boys 18 and 20 ,said they loved it. My 20 year old said that the chicken I cooked before was tasteless and asked me to cook it again. I certainly will do that

    My husband absolutely loves chicken parmigiana, particularly from Olive Garden.

    As we have cut eating out so as we can get out of debt, I was delighted to find your recipe. Today was Steve’s birthday, so I made this for him along with an alfredo sauce and thin spaghett. It got rave reviews! And it was so simple to make!

    Plus, a little while ago, I happened to borrow his 16 oz rubber mallet to flatten some chicken breasts for another dish. I liked it so well, I bought one specifically for the kitchen from the hardware store for a lot cheaper than one of those metal meat tenderizers. It hardly takes any effort at all to flatten four chicken breast!
